MORE OF GRANDMA LYN'S BEST COOKIE RECIPES
BUTTERNUT BALLS
1 cup unsalted butter
2 cups finely chopped pecans
1 teaspoon vanilla
2 cups flour
1/4 cup sugar
1/2 teaspoon salt
powdered sugar for rolling
Mix first 3 ingredients, then work in next 3 with hands.  Or mix
all in food processor, you had it out to chop the nuts anyway, right?
Shape into 1-inch balls.  Bake on cookie sheet at 350 degrees for
about 25 minutes.  Roll gently in powdered sugar while warm and
again when cool.  Makes 5-6 dozen.    
GRANDMA LYN'S NOTES:  Do not use any substitutes for the
unsalted butter. 
For the holidays, after rolling in powdered
sugar the second time, you can roll lightly in red or green
colored sugar for an extra touch. 
BUTTER-RUM SPRITZ
Daughter Susan's favorite!  These freeze really well so can be made
weeks before Christmas. 
Do not substitute for the butter! 
1 teaspoon rum flavoring
1/2 teaspoon salt
1 egg
1 cup (2 sticks) butter, softened
1/2 cup sugar
2-1/4 cups flour
Butter-Rum Glaze (below)
Heat oven to 400 degrees.  Mix butter and sugar in large bowl or food
processor; stir or pulse in next four ingredients.  Put dough in cookie
press and form shapes on ungreased cookie sheet.  Bake 6 minutes or
until set but not brown.  Cool on wire rack.  Spread or brush with
Butter-Rum Glaze.  Makes about 5-6 dozen depending on size.
(Grandma Lyn uses the star tip to form small open circles for wreaths, then
after baking and brushing with glaze, sprinkles each with green sugar and
  presses on each wreath two cinnamon candies (red hots) for holly berries.) 
BUTTER-RUM GLAZE
1/4 cup (1/2 stick) butter
1 cup powdered sugar
1 teaspoon rum flavoring
2 tablespoons hot water
Melt butter, remove from heat and stir in powdered sugar and rum flavoring.
Beat in water until spreading consistency.  If it thickens while using, can
put in microwave for just a few seconds to thin again.
